The Green Scene: Pea, mint, asparagus, feta & Baby Garlicky Kale Mix

Ingredients
• 1 bag Baby Garlicky Kale Mix
• 1 cup peas
• 1 bunch asparagus, trimmed and blanched
• Handful of fresh mint leaves
• Crumbled feta
• Zest of ½ lemon
• Olive oil, sea salt, black pepper

Recipe
Toss peas, blanched asparagus and mint through your Baby Garlicky Kale Mix. Drizzle with olive oil, zest a little lemon and crumble over feta. Light, punchy and full of green goodness, a bowl that tastes like sunshine and smugness.

The Pear Pressure: Roquefort, walnut & pear salad with Baby Garlicky Kale Mix

Ingredients
• 1 bag Baby Garlicky Kale Mix
• 1 ripe pear, thinly sliced
• Handful of toasted walnuts
• Crumbled Roquefort
• Olive oil and lemon juice
• Sea salt and black pepper

Recipe
Layer up Baby Garlicky Kale Mix with sliced pear and toasted walnuts. Crumble over Roquefort, drizzle with olive oil and finish with a squeeze of lemon. Sweet, tangy and perfectly balanced… salad that totally steals the spotlight.

Leaf It to Risotto: Porcini & wild mushroom risotto with Baby Garlicky Kale Mix

Ingredients
• 1 bag Baby Garlicky Kale Mix
• 1 cup arborio rice
• 1 onion, finely diced
• 2 cups mixed wild mushrooms
• 1 tbsp dried porcini, soaked and chopped
• 1L hot vegetable stock
• Butter and olive oil
• Parmesan shavings
• Sea salt and black pepper

Recipe
Sauté onion and mushrooms in butter and olive oil until golden. Stir through the rice, gradually add stock, and cook until creamy. Fold in Baby Garlicky Kale Mix just before serving and top with Parmesan. Rich, earthy and grounding…like a cosy jumper in a bowl.

Glow Up Bowl: Caramelised carrot, butternut & Baby Garlicky Kale Mix

Ingredients
• 1 bag Baby Garlicky Kale Mix
• ½ small butternut squash, cubed
• 2 carrots, peeled into ribbons
• Olive oil
• 1 tsp maple syrup
• ½ tin chickpeas, drained and rinsed
• Sea salt and black pepper

Recipe
Roast butternut with olive oil and salt until golden. Caramelise carrot ribbons in a drizzle of maple syrup, then toss everything through Baby Garlicky Kale Mix with chickpeas. Sweet, nutty and a little garlicky…comfort food that glows from the inside out.
