Immune boosting salad
Serves 4







Ingredients:
Unbeleafable mixed baby leaves
50g kale
50g broccoli florets
50g red bell pepper, sliced
50g carrot, grated
50g cherry tomatoes, halved
30g pumpkin seeds
30g sunflower seeds
1 small avocado, diced
1 lemon, juiced
2 tablespoons olive oil
Salt and pepper to taste
Method
- Wash the kale, broccoli, red bell pepper, cherry tomatoes, and carrot thoroughly.
- In a large salad bowl, combine Unbeleafable mixed baby leaves, kale, broccoli, red bell pepper, carrot, and cherry tomatoes.
- In a small pan, lightly toast the pumpkin seeds and sunflower seeds over medium heat for a few minutes, until fragrant and slightly golden. Remove from heat and set aside.
- Add the toasted seeds and diced avocado to the salad bowl.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
- Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
- Serve immediately and enjoy as a nutritious and immune-boosting meal!
