…it’s time to get inspired! This National Salad Week we’re LOVING Tina Lond-Caulk (aka The Nutrition Guru)’s vibrant

Ingredients


• Unbeleafable mixed baby leaves
• 50g kale
• 50g broccoli florets
• 50g red bell pepper, sliced
• 50g carrot, grated
• 50g cherry tomatoes, halved
• 30g pumpkin seeds
• 30g sunflower seeds
• 1 small avocado, diced
• 1 lemon, juiced
• 2 tablespoons olive oil
• Salt and pepper to taste

Instructions

1. Wash the kale, broccoli, red bell pepper, cherry tomatoes, and carrot thoroughly

2. In a large salad bowl, combine the Unbeleafable mixed baby leaves, kale, broccoli, red bell pepper, carrot, and cherry tomatoes

3. In a small pan, lightly toast the pumpkin seeds and sunflower seeds over medium heat for a few minutes, until fragrant and slightly golden. Remove from heat and set aside

4. Add the toasted seeds and diced avocado to the salad bowl

5. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing

6. Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly

7. Serve immediately and enjoy as a nutritious and immune-boosting meal!
