Unbeleafable® Spider Salad
6 medium carrots
1 bag of Unbeleafable mixed baby leaves
1 cup cucumber
1 cup croutons
½ cup Parmesan cheese
6 cherry tomatoes, halved
For beetroot salad dressing:
1 cup of chopped raw beets (about 1 large beet)
½ teaspoon of garlic
2 tablespoons of honey
½ teaspoon of apple cider vinegar
1 tablespoon Greek yogurt
1. Place carrot ribbons in a medium bowl filled with ice water for 20 minutes or until curled.
2. Toss together Unbeleafable mixed baby leaves, chopped cucumber, croutons, and shredded Parmesan cheese in a large bowl; set aside.
3. To assemble, place 4 carrot curls over the rim of one side of each 6 (16-oz) salad serving bowls; place 4 remaining carrot curls over the rim on the opposite side to create spider legs. Add salad mixture to bowls.
